This stainless steel probe from ETI is an oven probe. It’s part of a range of hand held temperature probes suitable for catering applications.
Although the probe and handle are made from steel the two metre lead is made from a highly resistant PTFE material. This makes it suitable for use in high temperatures.

It has a response time of less than four seconds which the time is taken by the sensor to reach 66.6% of the final reading (according to ETI). This is an industry standard of reading measuring probe response time. These results are dependent on the substance being measured so it’s sometimes difficult to reach an accurate response without knowledge of the application.
